The past couple of days it's been raining cats and dogs and all I want to do is snuggle up, binge watch on Netflix and drink all the coffee! It's really hard for me to get motivated lately. I gotta pull out of this funk. Anyways, here's another Taking Stock of all the nonsense I've been thinking and doing.
Making : Memories! Tim and I have been soaking up these last few days of summer, I love our adventures.
Cooking : I have been cooking breakfast almost everyday, lately. I'm really proud of myself about that, I can really see my confidence growing stronger in the kitchen.
Drinking : I've increased the amount of water I have daily and I'm down to one cup of coffee on a good day!
Reading: I've been on the hunt for new blogs to follow, and having been reading so many great ones.
Enjoying: Being a wife is such a joy, I love serving my husband so much. We still have moments when the excitement of it hits us all over again!
Liking: The Office! I have watched it probably 7 times through, but I can't get enough of it. Favorite show ever.
Wondering: My mind has been on the holidays, I'm really excited to experience our first year as a family and all the festivities that come with it.
Hoping: I recently found a babysitting job, and I really like the girls I watch. I'm hoping it's a good fit and I can be their permanent sitter.
Needing: I really need to tackle things around the house and get all of our unwanted furniture sold.
Wearing: Leggings! I love a good pair, but recently I've been ditching the jeans and staying comfy all day.
Following: As I mentioned earlier, I've been blog hunting and have found some really wonderful ones to follow :)
Feeling: I've really been trying to feel more body positive and confident about myself, physically. I can be so hard on myself and it's not a good habit.

With Labor Days passing and the weather changing a bit, I'm only anticipating Fall more! I started to pin all of the greatest Halloween decor ideas and look for fashion inspiration for the chilly months and today I began searching for some new recipes to try and I have 8 that I found quite share-worthy and are all vegan friendly!
1. Pumpkin Chocolate Chip Muffins
These muffins look delicious and perfect for any autumn gathering or a morning snack! I plan on getting the ingredients to whip these up next trip to the grocery store. Thank you, Minimalist Baker. Get the details!
2. Roasted Fall Vegetables With Lentils
I love fall vegetables and roots so much, so this recipe really caught my eye! With such simple ingredients that are filled with nutrients, this meal sure to be a go-to. I found this meal on Whole Living. Get the recipe!
3. Sweet Potato Vichyssoise
Sweet potatoes aren't for everyone, I know that.. But I cannot get enough of them in the colder months! Lucky for me, making this soup means I get the whole batch to myself for meals over the week since the hubby doesn't share my love for the veggie. DesignLoveFest shared this savory dish. 4. Mulled Cider
My last birthday was when I first tried this amazing alcoholic beverage, I had no idea of it's existence up until! I never thought I would ever try warm wine, but it definitely isn't like that at all. I look forward to trying and even playing with ingredients to make my own spin! 5. Fully-Loaded Vegetable Pot Pie
I've always been a big pot pie fan, but I've never attempted making one from scratch before. After finding this recipe, I know I will this year! these little veggies are jam-packed with vitamins and nutrients, and aren't that bad once you get used to them. This salad looks so fresh and light, I can't wait to try it! I have a lot of recipes for brussels sprouts and love to use then in sides for dinner. Peanut Butter and Peppers was kind enough to share this delightful dish. Get the recipe!
7. Vegetarian Pumpkin Curry
This is a great looking dish, especially to a family who loves eating ethnic food! The recipe can easily be made suitable for vegans as well. I found this recipe at Julia's Album. Get it here!
8. Stuffed Acorn Squash With Quinoa and Herbs
Again with the squash, but fall is just the time for it. I love stuffed dishes and this one sounds delicious and pretty easy! sometimes roasting can take a while, but only 30 minutes is called for in this recipe. I'm so glad I found A Couple Cooks for this dinner idea. Get the recipe!

Sedona Day Trip: Crescent Moon Ranch
Back again! Yesterday Tim and I spent the day in Sedona at Crescent Moon Ranch, one of my all-time favorite places. I have been coming up to this park since I was a kid! I thought I'd share photos from our venture, I've just been having so much fun with my Canon lately. Enjoy!
The water was a little cool, but actually felt nice with the heat. With all the rain we've gotten in Northern Arizona this summer, the views were just beautiful. I was regretful that I didn't come up more this season, but you can bet next summer we'll be camping a lot!
If you've never experienced Sedona, you have to at some point in your life. The terrain is remarkable and the hiking is amazing! After spending some hours at the park, we met up with my parents and siblings for dinner and a dip in the pool at the rental they were staying at. I'm so glad I got to experience this special place with my husband on just a perfect day, and it was so nice spending the evening with family.

Friday Faves! v.6 (on a Saturday)
Happy Saturday! Yesterday was jam packed and I just couldn't squeeze the time in to post. We took a day trip up to Sedona for a picnic, hiking, some swimming and dinner with my side of the family. More about that later, though ;) Here's the favorites of the week from yours truly!

The Day We Said "I Do"
August 24th, 2014, The day we became a family. A magical blur, as Tim describes it, and it really was. In the blink of an eye, all the months of preparation and planning, finished. We were both so nervous the morning of, neither of us really like to be the center of attention. I even had my garter fall to my ankle while walking down the aisle. But, when our eyes locked everything and everyone faded away, and it was just the two of us.
Tim and I decided to repeat aloud vows that we found and really liked, but also wrote our own personal ones to share quietly with one another. Tim mentioned our inside jokes and eloquently described his love for me. I was trying so hard not to cry, but once I saw a tear stream down his face, I couldn't hold back.
Our reception turned out beautifully and I'm so thankful for all the help from our family and friends. This was definitely a team effort and it wouldn't have been possible without everyone. Our cupcakes and topper cake were amazingly crafted. I had no idea desserts could look so perfect. After dinner, we opened the mic for speeches and toasting. Everyone had so many kind words to share and so much love filled the room, Tim and I are still reminiscing about some of them.
Our first dance was to XO covered by John Mayer. It's a little funny that our song is originally by Beyonce, but its sentimental to us and our relationship. We then danced with family and opened the floor for everyone to join. Tim and I got to sit back and watch all the love in the room, it was so beautiful and probably one of my favorite moment of the night.
I am so glad to have these photos for the rest of our life together to look back on. I hope you enjoyed a peek into our big day, and I hope you'l stick around to see where life takes us on this journey together!
